Ingredients: 1 ½ cups AP Flour; ¾ cup Sugar; 2 tsp Baking Powder; ½ tsp Salt; ⅓ cup Vegetable Oil; 1 Egg; ⅓ cup Milk; 1 cup Blueberries; ½ cup Sugar; ⅓ cup AP Flour; ¼ cup Butter - cut into small cubes; 2 tsp Ground Cinnamon

Liam loves blueberry muffins and we have tried multiple recipes over the years. After some tweaking, we settled on this recipe and these muffins are his favorite!

Blueberry Muffins with a Cinnamon Sugar Crumb Top

Ingredients

For the Muffins:

1 ½ cups AP Flour
¾ cup Sugar
2 tsp Baking Powder
½ tsp Salt
⅓ cup Vegetable Oil
1 Egg
⅓ cup Milk
1 cup Blueberries

For Sugar Crumb Top:

½ cup Sugar
⅓ cup AP Flour
¼ cup Butter - cut into small cubes
2 tsp Ground Cinnamon

Directions

Preheat oven to 400F
Combine AP flour, sugar, baking powder, & salt in a large bowl and set aside.
Combine egg, oil, & milk into a separate bowl and mix well. Pour into dry mix and mix until combined.
Fold in blueberries and set aside.
Add Sugar Crumb topping to a separate bowl & blend together with a fork until combined into a crumbly mixture.
Spoon batter into a greased or lined muffin baking tin and top evenly with Sugar Crumb topping.
Bake 20-25 minutes, until a toothpick comes out clean.
